Nancy’s Valentine's Cranberry Cheesecake
- Graham Cracker Pie Crust
- 1 (8oz) pkg Cream Cheese, softened
- 1/3 C white Sugar
- 1 Egg
- 1 tsp Vanilla
- 1 can (16oz) Whole Berry Cranberry Sauce
- 1/2 C Confectioner's Sugar
Heat oven to 350. In a medium size bowl, with an electric mixer, beat cream cheese, white sugar, egg and vanilla. Spread into pie crust. Pour cranberry sauce into a small bowl and stir to loosen. Dollop onto cream cheese mixture. Bake for 30 minutes, until set. Remove to wire rack and cool. Transfer to refrigerator and chill. Before serving, mix confectioner's sugar and 2 teaspoons water. Transfer to sealable plastic bag and snip off corner. Drizzle on top of cheese cake.
